Fresas Con Crema
When I asked my friend Miguel’s mom to share with me her recipe for strawberries and cream or fresas con crema, she looked at me in shock! I knew that even though she grew up in Mexico, she speaks both Spanish and English probably better than me! A receta. she shouted! You need a recipe for such a simple dessert? Two seconds later she started saying things like a little bit of this and more of that!
The truth is making fresas con crema is so easy that is hardly a recipe and most mom’s don’t feel the need to have a receta written!

What Is Fresas Con Crema?
Fresas con crema is a popular Mexican dessert made with fresh and ripe strawberries diced or sliced and served with a flavorful and smooth cream made with sour cream, sweetened condensed milk, evaporated milk and vanilla extract.
The combination of these ingredients creates a thin and pourable dessert sauce that is rich in taste yet light and very refreshing. An ideal treat for warm days and a great end to a summer meal.
Strawberries and Cream Recipe Ingredients
- Strawberries: Seasonal berries are best. I buy organic and local when available.
- Sour Cream: You can use full-fat or light sour cream. Mexican crema or cream fraiche can also be used.
- Sweetened Condensed Milk: This canned sweetened milk is thick and delicious. It’s found in the baking section of any supermarket.
- Evaporated milk: This shelf-stable, concentrated canned milk is very popular in all Latin America. This unsweetened milk is made by evaporating (removing) water from fresh cow’s milk.
- Vanilla Extract: Always choose good quality vanilla extract or make your own at home.
How To Make Fresas con Crema
- In a large mixing bowl, whisk together the sour cream, condensed milk, milk and vanilla extract until evenly combined.
- Hull the strawberries and discard the stems. Cut the strawberries into bite size pieces or into thin slices.
- Start layering the berries and cream. Add a couple of spoonfuls of strawberries into a glass or cup, pour some of the cream mixture over the berries. Add more fruit and top with the cream. Layer until the cups are full.
- You can top this dessert with a dollop of whipped cream.
Recipe Variations
- Replace the full-fat sour cream with light sour cream, Greek yogurt or creme fraiche.
- Replace the evaporated milk with whole milk, half and half or heavy cream.
- You can use fresh raspberries, blueberries, blackberries or fresh peaches instead of fresh strawberries.
Topping Ideas
This easy Mexican dessert doesn’t need anything but I spoon for you to scoop it up but if you feel like adding your favorite topping, here are a few ideas:
- Whole strawberries and whipped cream
- Granola
- Chopped nuts
- Crushed cookies (chocolate wafers and Oreos are great option)
Making Ahead and Storage
You can mix the creamy sauce ahead of time and store it in an airtight container in the refrigerator. Without combining it with the strawberries, the sauce will keep for about 5 days.
Leftovers, sauce and berries mixed together will last in the fridge, covered for about a day.

Make the Cream

Chef’s Tips
- Instead of full-fat sour cream you can use light sour cream or Greek yogurt.
- Substitute evaporated milk with heavy cream, half and half or whole milk if preferred.
- If the strawberries are too tart, sprinkle about a tablespoon of sugar over the cut berries. Gently toss and allow to sit for 5 to 10 minutes.
