Who knew that skinning tomatoes could be such a pain in the ...........neck.
But now I have fresh tomato sauce for the freezer so I think, kinda, that it was all worth it.
If you have an abundance of tomatoes like I do, here is a recipe to try for your future pasta dinners.
Fresh Tomato Sauce
Serve over pasta
1 lb tomatoes
1 med. onion chopped
8 tbsp chopped fresh basil
2 cloves garlic crushed
salt and pepper to taste
1/2 cup vegetable stock
1/2 tsp. brown sugar
2 tbsp. olive oil
Peel the tomatoes by plunging them into boiling water. Leave them for one minute and then plunge them into cold water, then peel off the skins.
Put the remaining ingredients, except the oil, into a large saucepan and stir well.
Bring the mixture to a gentle boil, then cover, reduce the heat and simmer for 40 min.
Add the oil and remove the sauce from the heat.
Good source of Vitamin A & C.

There is a lot of cleaning up to do in my kitchen tonight but I have good company. Annie enjoyed her dinner and is now in her 'clean-up mode' herself.
