Well, the mac and cheese dinner turned out fine so I have given you the recipe at the end of the post.
We ate half and daughter #2 dropped by and went home with the rest.
I can highlight that one.
The nice thing about mac and cheese is you can add your own touches to it. I covered it with fresh tomatoes and basil before popping it in the oven. That wasn't in the recipe.
This is my new centerpiece for the dining-room table. It looks like I went around the house blindfolded and dropped stuff in a basket. It makes me laugh. BUT...it's china, honey and cute napkins. What's not to love?Linda McCartney's Mac & Cheese
3/4 lb. macaroni uncooked
1 egg
2 cups milk
1 tbsp. butter
21/2 cups cheddar cheese
salt and pepper
Lightly boil macaroni until 3/4 cooked
Mix the egg and milk together
Melt the butter and add it with the grated cheese to the milk mixture. Stir well
Place the cooked macaroni in a buttered casserole dish and pour the egg and cheese mixture over-top. Salt and pepper to taste and mix. Bake uncovered for 35-40 minutes at 350 degrees.
I added tomato slices and basil on top. It did add some great extra flavor.
This is a good source of protein, Vitamin A & calcium.
Next recipe...Beefless Stew
Guess who's comin' for coffee today? Natalie & Ronna are dropping by and dragging Gordon & Richard along this time. We'll have coffee here and then we are all heading out to the pub for lunch. Great way to spend a rainy Saturday.
Audrey is getting a lecture here from Aunt Lily on how to act when company arrives. Apparently, Lily was mortified at Audrey's disregard for our company of late. Does she look interested, or by that matter, impressed? Maybe this time she won't turn her tail up and stomp away like a spoiled princass.
hugs, Deb
