Tomatoes!
The secret behing this 'sauce' is fresh ingredients. There is no substitute for vine ripe tomatoes, and fresh basil. It can be used as a sauce on pasta, or as a topping for bruschetta.
Ripe Homegrown or Locally Grown Tomatoes, chopped
(I love heirloom tomatoes in various colors)
Sweet Mild Onion (like Vidalia), chopped
Garlic, minced
Good Olive Oil
Basil, chopped coarsely
(I added some cucumber since I have oodles of them)
Combine all of the above and let them blend at room temperature. Serve over hot pasta with Parmesan cheese. Also good cold the next day.
Nancy added that Giada De Laurentis even did a version with leftover Caprese Salad~ now it can't get much easier than that.
This looks like a great side for Peachy Pork Chops or Orange Glazed Salmon .
Y'all enjoy your Sunday~
Sandi
