This is a simple recipe I found in a cookbook the Peace Corps provided us. I’ve never actually seen a Bulgarian either make or eat this soup, but it was surprisingly good. I plan on experimenting with лютеница (lutenitsa) in some other soups in the future, and, if I find something that works, I’ll post it. In the meantime, you can try this.
1 and ½ cups of лютеница (I will post a recipe for homemade лютеница in the future)
2 and 2/3 cups of milk
¾ of a cup of orange juice
4 teaspoons of dried basil
salt and pepper to taste
Mix all ingredients and heat over medium-low heat until hot.
A bowl of лютеница чорба (lutenitsa soup).
